Easy Homemade Tomato Soup
Use Roma Tomatoes to Make Soup
What you’ll need:
1 dozen Roma Tomatoes
Small amount of Heavy Cream
4 to 6 tbsp. of butter
Salt and Pepper to taste
Wash a dozen Roma tomatoes and slice off the tops. Cut across in the bottom of each tomato and put in a pot with a small amount of water. Cover and let simmer until skins can be easily peeled off. Allow to cool. Cut into chunks and run through a food processor until tomatoes are pureed. Put back into the pot and add a small amount of heavy cream and about 4 to 6 tbsp. of butter. Cover and let simmer on low for about 35-40 minutes stirring occasionally. Salt and pepper to taste.
The Roma tomatoes are fleshier tomatoes providing a hearty, rib-ticklin’ broth.
Enjoy!
