The holidays are upon us, and what better way to celebrate than with a delicious taste of eggnog? This Coconut Cashew Eggnog is made with cashews, coconut milk, vanilla, cinnamon, and nutmeg—giving it a wonderfully unique spin on the classic drink.

It is believed that eggnog began in Europe. As early as the 13th century, medieval monks in Britain were known to drink “posset,” a warm ale punch with eggs and figs. This medieval drink eventually made its way to America, where rum was used instead of ale. Today, eggnog continues to be a holiday favorite enjoyed by people all over the world. And there are now many different versions of this classic recipe— making it easy for everyone to find their perfect twist.

So if you’re looking for something a little bit different this holiday season, give this Coconut Cashew Eggnog a try.

Holiday Eggnog

Serves 4-6

Total Time: 8 hr 20 min

Vegan, Grain-Free, Dairy-Free

1 1/3 cups untoasted cashews, soaked overnight (approx. 6hrs.)

1-quart coconut milk from a carton

1/2 cup cane sugar

3/4 teaspoon ground cinnamon

2 teaspoons vanilla extract

1/2 teaspoon ground nutmeg

1/2 teaspoon cinnamon

Freshly grated nutmeg, optional

Directions

  1. Place all ingredients in a blender and run until the mixture is very smooth and frothy.
  2. Place eggnog in a serving pitcher and chill for an hour before serving.
  3. Pour into serving glasses and grate nutmeg on top.
