Chocolate Chia Pudding
You know you want it! Let’s make Overnight Chocolate Chia Pudding to be ready as soon as you wake up. Healthy pudding for breakfast is a great way to start your day.
Chia seeds have the power to thicken your concoction into creamy pudding consistency. If you prefer, you could use ground chia seeds instead of whole chia seeds. You would never notice the seeds at all if they were ground up into a fine powder. The powdered chia works just fine, magically thickening your recipe into dessert!
Black or White Chia Seeds?
It matters not if you make black chia seed pudding or white chia seed pudding as the nutritional and fiber content is quite similar, regardless. Often chias arrive in a mixed batch and this is perfectly fine. Once the dessert is created, the color of the chia seeds will be far from front and center in your mind!
Just use what is handy or in your kitchen cabinet. Black chia pudding and white chia pudding both have a neutral flavor and only asthetics could persuade you to choose one over the other.
CHOCOLATE CHIA PUDDING RECIPE
2 cups of coconut milk
4 tbsp. Cocoa or Cacao powder
stevia or honey to taste
1 tsp. vanilla extract
6 tbsp. Chia seeds (Use less if you want a thinner pudding.)
Optional Pudding Toppings:
Cacao Nibs
Whipped cream
The evening prior, place coconut milk, cocoa powder, vanilla and sweetener in a food processor or blender and mix until completely smooth. Put chia seeds into a large glass jar and pour contents of blender over the seeds. Stir until ingredients are thoroughly mixed. Place cap on jar and refrigerate overnight. Pudding will be ready in the morning. Enjoy it for breakfast!
