Baked Pear Oatmeal
Wouldn’t you like a hot breakfast that you can pull together before coffee? Baked pear oatmeal sounds like a winner on chilly winter mornings. Freshly chopped pears add a burst of seasonal fruit sweetness. Best of all your hot breakfast is made with old-fashioned organic oats on sale this month!
Serves 8. Vegetarian. 1 hour until done.
Here’s how:
Ingredients
2 cups Bob’s Red Mill® Organic Old Fashioned Rolled Oats
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ground ginger
1$ tsp nutmeg
3 cups water, milk, pear juice, or apple juice
2 eggs
1/2 cup brown sugar
1/4 cup melted, cooled butter
1 tsp vanilla extract
2 cups chopped fresh pears about 2 whole
Directions
- Preheat oven to 350º F. Butter a 9 X9 inch baking dish and set aside.
- Combine dry ingredients in a small bowl: rolled oats, baking powder, salt and spices
- In a large bowl, whisk eggs together with wet ingredients: liquid, brown sugar, butter and vanilla. Add oat mixture to wet ingredients and mix to combine. Fold in chopped pears.
- Transfer mixture to the prepared baking dish and bake until set, 40 – 50 minutes. Let cool about 5 minutes before serving.
Nice and warm to start your day! Serve with a little cream if desired to make it look like snow. Its easier to shovel!
