Her story has a familiar beginning; two kids who just wouldn’t eat their vegetables. Nevertheless, Jen persisted. She started sneaking veggies into food wherever she could. Her kids were none the wiser, the recipes kept on coming, and eventually Veggielicious was born. Now, she shares her handmade vegetable-based desserts with Martindale’s shoppers.
What’s on the Menu?
Jen’s Carrot Cupcakes are nut-free and made with 2 cups of whole organic carrots. The carrots are finely pureed and added into the mixture, resulting in a moist, delicate carrot cake. Whipped cream cheese frosting is the perfect complement to these “24 carrot” cupcakes.
